The windy, cool climate and clay rich soils of this lower Monterey County site (Arroyo Seco AVA) mirror those of sites in Austria where Grüner Veltliner is often planted.

Vinification
Grapes are gently whole cluster pressed. SO2 is used at tank and efforts are made to limit exposure to oxygen. After a light-settle in tank, the wine is racked with light lees to an even mix of stainless steel and neutral French oak for fermentation and aging. Additional small amounts of sulfur are used based on Total SO2, and wines are filtered before bottling.
