The delicate and complex nose opens with a first floral note of violet and then moves towards aromas of ripe red fruits such as cherry.

You can also smell spicy but discreet notes of pepper. On the palate the wine is very fine and elegant, the fruit is present but not excessive, cherries and strawberries dominate. The tannins are light and silky and the freshness brings a lot of drinkability.

The balance and complexity make it a very pleasant and easy-drinking wine. It is best served at a slightly cool temperature to appreciate all its subtleties.

Vinification
Whole-bunch fermentation for about 15 days. In the cellar low intervention techniques are used to no intervention at all.

This delicate variety goes through fermentation in the most neutral containers, partly in stainless steel vats, partly in terra cotta pots. In this manner, both the fruit and purity in wine are respected.

Unfined, unfiltered. Bottling day is always set on a fruit day with a waning moon. At this stage, sulphur is added at levels of 2 grams max per hectolitre.
