Vinification
Grapes are hand-harvested at optimal ripeness, in accordance with the biodynamic calendar. After cooling overnight in the winery courtyard, they are destemmed and undergo cold maceration at 10–14°C for five days to extract color and aromatics without tannins. Fermentation follows at 25–28°C with daily pump-overs — up to three times at peak activity, reduced toward the end — guided by sensory evaluation. Total maceration lasts 20–25 days, including post-fermentation. After pressing, the wine is aged in used French oak barrels for 24–36 months.
