Vinification
Manual harvest, preferably done on a fruit day to follow biodynamic calendar. The grapes are destemmed and kept for 5 days at 10 - 14 C. to macerate, extracting color and aromas. After maceration, fermentation follows in stainless steel tanks at a temperature between 25 and 28 C. with daily pump-overs, to oxygenate the must and favor extraction from the hat. Fermentation lasts around 20-25 days, then the wine is racked. After racking, the wine is aged in used French oak barrels for 18 and 24 months.
