Vinification
Fermented in small 1-ton stainless steel fermenters with approximately 15% whole cluster inclusion. Indigenous yeasts are used exclusively for both primary and malolactic fermentations. The must undergoes a 5-days cold soak, followed by 14 days of total maceration. Aged in French oak barrels, 10% of which are new.
