Chablis 1er cru Vaucoupin
Baudouin Millet · Burgundy, France
Chablis 1er Cru Vaucoupin is nestled on the right bank of the Serein river, in the township of Chichée. This 1er Cru benefits from full sun exposure allowing the vines to fully mature. Yields are low due to the limestone soils, sun exposure and strong wind. The wine is characterized by its freshness, volume and ampleness on the palate and chalky minerality.

Vinification
The grapes were pressed as whole clusters and the juice was chilled for 24 hours prior to being racked at 10C. Wine is then fermented in stainless steel tanks at low temperature (between 18ºC and 20ºC) for 18 days. Then malolactic fermentation takes place. Wine is left on fine lees for several months (3-4 months). Wine is lightly filtered before bottling.
