Cambrico Miranda Rufete

The wine is made with the local variety Rufete from three plots located in Miranda del Castañar at an altitude of 700 m. The vines are over 80 years old. It is a delicate wine, with concentrated aromas of ripe red fruits, floral aromas of wild herbs and very fine tannins with persistence and minerality.

Vinification
Bunches are sorted and hand harvested into 16 kg crates. Grapes are 70% destemmed and carefully sorted. Grapes are then transferred by gravity into stainless steel tanks where spontaneous fermentation takes place. Malolactic fermentation is done in used French oak followed by 7 months aging in used barrels of 300 and 500L. Occasional punch-downs. Unfined, unfiltered.
