Socaire is recognized as one of the first white wine in the sherry triangle to explore the “whites from albariza” category. It combines aromas of the Palomino Fino grapes with hints of flor, giving the wine secondary herbaceous aromas, a chalky character with a delicate salty finish.

Vinification
Spontaneous barrel fermentation in American oak previously used for Fino sherry aging, thus wanting to obtain a white wine with more structure and secondary aromas. Once the fermentation is finished, barrels are toped off to avoid the formation of flor.
