Nicot blanc comes from a parcel on limestone-clay soil with depth witch benefits from north-eastern exposure. This wine is fermented spontaneously, using low intervention, resulting in a medium body white wine, with freshness, floral aromas, with notes of green apple, and great minerality.

Vinification
Grapes are gently pressed. Must is only partially racked so it is not too stripped. Natural yeast fermentation for three weeks up to a month at a 18°C . Malolactic fermentation is not interrupted by sulfite or sterile filtration to stay true to the terroir. 2 grams per hectolitre of SO2 added at bottling.
