Nicot Rouge

Nicot Rouge is Blend of Syrah from north-facing Poujol terroir (silty-clay soil) and Grenache from Saules terroir (clay-limestone) soil with an eastern exposure. This is a lively red wine fermented spontaneously, using low intervention, resulting in a bright medium body, juicy red wine with aromas of raspberry, black berries and cassis.

Vinification
Syrah grapes are fully destemmed while grenache is kept whole bunch. Grapes are placed in hermetically sealed vats and it only takes a few hours for fermentation to start, thanks to natural yeast with no added sulfur. Pumping over is made with no exposure to air, and aerations are only carried out only to reduce the impact of tannins. Maceration lasts for about a month. Fermentation occurs in concrete vat and wine is not filtered prior to bottling.
