Vinification
After manual de-stemming, the grapes ferment in clay tanks (amphoras over 200 years old). The fermentation process is spontaneous and takes four weeks. Temperature and density measurements are made daily with gentle hand movements to moisturize the skins. When the fermentation ends pressing is done with an antique manual screw press.
