This Chardonnay comes from some of the coldest areas of the Casablanca Valley, where the morning fog remains longer hours preserving the freshness in the grapes. Harvest is done by hand during March, looking for grapes that will provide a clear, bright wine with a golden yellow color. After fermentation in stainless steels tanks and aging for a year in a combination of oak and stainless steel vessels, we get a very elegant and expressive nose, combining fresh fruit, with floral notes and hints of white peach and green apple notes in harmony with some saltiness. Rich on the palate, ranging from white fruit to mineral notes, beautifully balanced.

Vinification
Chardonnay bunches have been destemmed gently, and single grape berries sorted and crushed. Fermentation lasted 15 to 21 days fermentation in stainless steels tanks. Wine is then aged for a year in tanks (56%), French oak foudre (21%) and barrels (33%) in order to gain complexity and structure.
